Tuna and corn patties

Recipe adapted from Get Up and Grow: Cooking for Children with permission of the Australian Government.

Method
  1. Preheat oven to 180°C.
  2. Drain canned tuna.
  3. Dice onion.
  4. Peel and chop potato into small pieces. Steam for 20 minutes, or until tender.
  5. Mash potato and tuna with lemon juice until smooth. Place in fridge to cool for 30 minutes.
  6. Drain and rinse corn kernels.
  7. Combine potato and tuna with corn, onion, breadcrumbs and egg.
  8. Take small handfuls of mixture and roll into balls. Flatten gently to form patties.
  9. Line baking tray with non-stick baking paper. Place patties on lined tray.
  10. Refrigerate until patties are firm.
  11. Spray lightly with olive oil spray.
  12. Bake in oven, turning once, for 30 minutes or until golden.
  13. Serve with wholemeal bread and lettuce, sliced tomato and cucumber (or with cooked vegetables).

Allergy modifications

  • For an egg free option replace each egg with 1 teaspoon of egg replacer and 2 tablespoons of water.
  • For a gluten/wheat free option replace breadcrumbs with a similar quantity of rice crumbs or cooked rice and serve with gluten free bread/wraps.
  • For a soy free option use soy free breadcrumbs and bread.
  • For a milk protein free and lactose free option use breadcrumbs which do not contain milk products.

Recipe tip

  • Serve with salad in a bun for a healthy burger alternative.
  • Tuna can be swapped for tinned salmon.
