Method
- Pre heat oven to 180oc
- Put the chicken in a bowl and toss with the Tuscan seasoning, ripped basil and olive oil. Cook the chicken for 25-35 minutes or until juices run clear.
- Lay out a tortilla and spread the base with cottage cheese and sprinkle with the pepper. Layer the rocket, roast tomato, capsicum and onion to one side.
- Top the salad with the sliced cooked chicken and roll up tightly. Serve toasted.
