Pork and broccoli slice (Allergy friendly)

Potato or sweet potato 2 medium  8 medium  20 medium 
Olive or canola oil spray ½ tablespoon 2 tablespoons 3 tablespoons
Onion, diced  ¼ small 1 small 4 small
Minced pork 300g 1.25kg 3kg
Broccoli, diced  1 cup 4 cups 10 cups
Corn 125g 500g 1.25kg
Lemon juice 2 teaspoons 2 tablespoons 100mL
Egg replacer 1 teaspoon 4 teaspoons 10 teaspoons
Water 2 tablespoons 160mL 400mL
Cooked rice ½ cup 2 cups 5 cups
Wholemeal gluten free bread  6 slices 25 slices 60 slices
Lettuce  3 leaves (20g) ½ medium head (270g) 1 large head (540g)
Tomato  1 medium 3 medium 6 medium
Cucumber  ½ small 1 medium 1 large

 

Method

  1. Preheat oven to 180°C.
  2. Peel and chop potato into small pieces. Steam for 20 minutes or until tender.
  3. Heat oil in pan. Add onion and pork. Cook, gently stirring, until pork is cooked through.
  4. Add broccoli and corn. Gently stir to heat through.
  5. Mash potato with lemon juice until smooth.
  6. Combine egg replacer and water as per instructions on egg replacer package.
  7. Combine potato, pork mixture, rice and egg replacer mixture.
  8. Line baking tray with non-stick baking paper.
  9. Press potato mixture into baking tray.
  10. Bake in oven for 30 minutes or until golden.
  11. Serve with gluten free bread and lettuce, sliced tomato and cucumber.

  • 1 children’s serve of meat/alternatives (pork)*
  • 1 children’s serve of vegetables (patty and salad)**
  • 1 children’s serve of grains (gluten free bread and rice)***

 

Tips

  • Canned tuna, beef or chicken mince can be used instead of pork. Tuna should only be used if no children require fish free meals.
  • Gluten free bread often contains soy. This should be checked for children who are allergic to soy.
  • Gluten free bread often contains egg. This should be checked for children who are allergic to egg.
  • Serve with regular bread for children who are not allergic to wheat and who do not have coeliac disease.
  • This recipe can be served with cooked vegetables instead of salad.
