Method
- Cook rice according to packet instructions.
- In a large, deep non-stick frying pan, heat oil on medium-high heat. Add onion and capsicum and cook, stirring, for 3-4 minutes, until softened. Add garlic and cook for 30 seconds or until fragrant. Add mince, oregano, cumin and cinnamon and cook, stirring to break up lumps, for 5 minutes or until mince is cooked. Stir through tomatoes, beans, stock and water and cook, stirring occasionally, for 10 minutes or until tomatoes have started to break down. Add peas and raisins and simmer for a further 3 minutes or until the peas are cooked and the sauce has thickened.
- Top picadillo with olives and serve with rice.
Allergy, intolerance, and dietary preference modifications
- To make vegetarian/vegan – swap chicken for tofu (if no soy allergy) and swap salt-reduced chicken stock to salt-reduced vegetable stock.
This recipe does not account for potential contamination that may occur through manufacturing and processing. Ingredients in this recipe may still have precautionary allergen food labelling (e.g. “may contain traces of”).

Recipe tips
- The easiest way to cook rice is in the rice cooker or pressure cooker. For the pressure cooker method, add a ratio of 1:1 rice to water to the pressure cooker. Seal pressure cooker and cook for 3 minutes, then slowly release the pressure.
- If you have fresh coriander in your long day care’s garden, finely chop some and stir through at the end.
- For variety, lean beef or lamb mince would also work well in this recipe instead of chicken.
- For larger serves, you will need to cook the ingredients in batches or across 2-4 large, deep frying pans or woks.
