Method

  1. Preheat oven to 180°C.
  2. Beat the eggs, then slowly add flour, zucchini, carrot, corn, cheese and onion.
  3. Pour the egg mixture into a greased baking dish.
  4. Bake for 30 to 40 minutes or until slightly browned on top and set in the centre.
  5. Cut into slices.
  6. Serve with triangles of wholemeal pita bread.

Allergy modifications

  • For a milk protein and lactose free option omit the cheese.
  • For a wheat/gluten free options replace flour with gluten free flour and replace pita bread with gluten free bread (check gluten free products for soy if required)

 

Tip

  • Can be served hot or cold.
  • Serve with a salad or vegetables to boost vegetable intake and to add colour to the plate.
