Method
- In a large saucepan or pot, heat oil on medium-high heat. Add potato, celery, carrot and capsicum and cook, stirring occasionally, for 5-10 minutes, until starting to soften. Add garlic and cook, stirring, for 1 minute or until fragrant. Add flour and stir to coat vegetables. Add one-quarter of the stock and stir to combine. Gradually add the remaining stock and stir to combine. Stir through lemon juice, capers, anchovy, dill and turmeric and bring to the boil. Reduce heat to medium-low and simmer for 15 minutes or until vegetables are cooked and flavours develop.
- Meanwhile, cook couscous according to packet instructions.
- Add fish and beans to the vegetables and cook, stirring occasionally, for 5 minutes or until the fish is cooked through. Serve fish stew with couscous.
Recipe tips
- Cod, haddock, swordfish and mackerel fish fillets all work well with this recipe.
- This recipe was tested with salt reduced chicken stock. It tastes great and is a budget-friendly option compared to fish stock.
- For larger serves, you will need to cook the ingredients in batches or across 2-4 large, deep saucepans or woks.
