Method
  1. Combine the tomato, coriander, onion, chilli and garlic in a bowl, mix well.
  2. Mix together the lime juice, olive oil, pepper and salt, pour this over the salsa and mix well again. Use straight away or allow to rest so the flavours develop.
  3. Could be utilised as a bruschetta topping or accompany main dishes as a side condiment.
